Method
 

Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the fresh tangerine juice, minced garlic, olive oil, chopped rosemary, salt, and pepper. Stir until well-blended.
  3. Place the lamb in a resealable bag or baking dish. Pour the marinade over the lamb, seal, and marinate in the refrigerator for at least 1 hour or overnight.
  4. After marinating, allow the lamb to rest at room temperature for about 30 minutes.
  5. Place the marinated lamb in the oven and roast for approximately 1 hour and 30 minutes, aiming for an internal temperature of 145°F (63°C).
  6. After roasting, cover with foil and let the lamb rest for at least 15 minutes before slicing.
