Preparation
  1. Preheat your oven to 400°F (200°C). Wrap the medium beet in foil and roast for about 45 minutes, or until fork-tender.
  2. While the beet is roasting, steam the fresh broccoli florets for about 5 minutes until bright green and tender-crisp. Set aside.
  3. If you haven't cooked the brown rice yet, prepare it according to package instructions (30-40 minutes depending on the method).
  4. In a small mixing bowl, whisk together fresh lemon juice, olive oil, salt, and pepper until fully emulsified.
  5. Once the roasted beet has cooled, slice it into bite-sized pieces. In a large bowl, combine your cooked brown rice, steamed broccoli, and sliced beets. Drizzle the lemon dressing over the top and gently toss.
  6. Plate the assembled bowl and enjoy immediately.
