How to Make
- Cut the chicken breasts into uniform 1-inch cubes and pat them dry with paper towels.
- In a mixing bowl, toss the chicken cubes with olive oil, garlic powder, paprika, salt, and pepper. Let marinate for at least 15 minutes.
- Skewer 4-5 pieces of marinated chicken onto soaked skewers, leaving small gaps for even cooking.
- In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until smooth.
- Cook using your preferred method: grill for 5-6 minutes on each side, bake at 425°F for 10-12 minutes, or pan-fry for 8-10 minutes until cooked through.
- Brush the cooked skewers with reserved sauce and sprinkle with garnishes. Serve with extra sauce and lime wedges.
