Cooking Steps
- Generously coat your chuck roast with salt and pepper on all sides.
- Set your Instant Pot to 'Sauté' and heat olive oil until shimmering. Sear the roast for about 4-5 minutes on each side until golden brown.
- Remove the roast and sauté diced onions and minced garlic in the leftover oil for about 3 minutes.
- Pour in the beef broth and deglaze the pot, scraping up any brown bits.
- Return the roast to the pot, add chopped carrots, halved potatoes, and thyme and rosemary.
- Secure the lid and set to 'Pressure Cook' on high for 60 minutes.
- Let the pot naturally release pressure for 10 minutes, then perform a quick release.
