  • 3 pounds Chuck Roast A well-marbled piece for flavor and tenderness.
  • 1 tablespoon Salt To taste.
  • 1 teaspoon Pepper To taste.
  • 2 tablespoons Olive Oil For searing the roast.
For the Vegetables
  • 2 medium Onions Sweet or yellow onions preferred.
  • 3 small Carrots Classic pot roast ingredient.
  • 4 medium Potatoes Yukon Gold or red potatoes preferred.
  • 2 stalks Celery Optional ingredient.
For the Broth and Herbs
  • 4 cups Beef Broth For moisture and flavor.
  • 3 cloves Garlic Minced, optional for milder taste.
  • 2 teaspoons Thyme Fresh preferred.
  • 2 teaspoons Rosemary Fresh preferred.

Method
 

Cooking Steps
  1. Generously coat your chuck roast with salt and pepper on all sides.
  2. Set your Instant Pot to 'Sauté' and heat olive oil until shimmering. Sear the roast for about 4-5 minutes on each side until golden brown.
  3. Remove the roast and sauté diced onions and minced garlic in the leftover oil for about 3 minutes.
  4. Pour in the beef broth and deglaze the pot, scraping up any brown bits.
  5. Return the roast to the pot, add chopped carrots, halved potatoes, and thyme and rosemary.
  6. Secure the lid and set to 'Pressure Cook' on high for 60 minutes.
  7. Let the pot naturally release pressure for 10 minutes, then perform a quick release.
