Preparation
- Pat the chicken wings dry with paper towels. Mix potato starch, baking powder, garlic powder, onion powder, and paprika in a bowl. Toss wings in the mixture and let them rest on a wire rack for at least 30 minutes.
Cooking Method
- Oven-Baked: Preheat your oven to 400°F (200°C). Arrange wings on a baking sheet, spray lightly with oil, and bake for 20-25 minutes. Flip them, spray again, and bake for another 20-25 minutes until golden and crispy.
- Air Fryer: Set your air fryer to 380°F (190°C). Cook wings for 18-20 minutes, shaking the basket halfway through for even cooking.
Glaze Preparation
- Melt butter over medium heat in a saucepan. Sauté minced garlic for 30-60 seconds until fragrant. Add honey and lemon juice, stirring well. Mix in lemon zest and a pinch of salt.
- Bring sauce to a gentle simmer, reduce heat, and let simmer for 5-7 minutes. Stir in freshly ground black pepper to taste.
Coating Wings
- In a large bowl, combine hot, crispy wings with about three-quarters of the honey lemon pepper sauce. Toss gently until fully coated, adding more sauce if desired.
