- Rinse and dry 2 cups of fresh spinach and chop one red bell pepper into small pieces.
- In a clean jar, start with the 2 cups of spinach at the bottom.
- Layer in ½ cup of mandarin oranges, followed by ½ cup of chopped red bell peppers.
- Sprinkle ¼ cup of chopped nuts on top, followed by crumbled feta cheese.
- In a small bowl, whisk together 3 tablespoons of olive oil and 2 tablespoons of balsamic vinegar.
- Seal the jar, give it a gentle shake to mix the layers, and enjoy.
