Ingredients
  

For the Chicken
  • 1 lb Chicken thighs or breasts Can substitute with tofu or chickpeas
  • 2 tbsp Olive oil Can use avocado oil
  • 1 tbsp Cumin
  • 1 tbsp Paprika Smoked paprika works great
  • 1 tsp Garlic powder Can use fresh garlic
  • 1 tsp Turmeric Optional
  • to taste Salt & pepper
For the Rice Salad
  • 3 cups Cooked rice (cooled) Brown rice or quinoa can be alternatives
  • 1 cup Cucumber Diced
  • 1 cup Tomatoes Diced
  • 1 small Red onion Sliced
  • 1/2 cup Fresh parsley or cilantro Chopped
For the Dressing
  • 1/2 cup Tahini Can substitute with Greek yogurt
  • 3 tbsp Lemon juice
  • 1 clove Minced garlic (for dressing) Can use garlic powder
  • water Adjust for consistency To achieve desired creaminess

Method
 

Preparation
  1. Marinate Chicken: In a large bowl, combine olive oil, cumin, paprika, garlic powder, turmeric, salt, and pepper. Mix well and coat the chicken, allowing it to marinate for at least 30 minutes.
  2. Cook Chicken: Grill or pan-sear your marinated chicken over medium-high heat until cooked through, about 7-10 minutes. Let it rest for 5 minutes before slicing.
  3. Crisp Rice: Heat a skillet with 1 tablespoon of oil and add the cooled rice. Cook for about 5-7 minutes until golden and crunchy or air-fry at 400°F for about 10 minutes.
  4. Prepare Vegetables: Dice the cucumber, chop the tomatoes, slice the red onion, and finely chop your herbs. Keep them ready for assembly!
  5. Make Dressing: Whisk together tahini, lemon juice, minced garlic, olive oil, and water until smooth. Chill the dressing for 15 minutes.
  6. Assemble Salad: Layer the crispy rice, top with sliced chicken, fresh vegetables, and drizzle with tahini dressing. Add pickles if desired.
