  • 2 medium oranges peeled and segmented
  • 4 cups arugula or spinach
  • 1 cup feta cheese crumbled
  • 1/2 cup walnuts or pecans toasted

  • 1/4 cup olive oil

Preparation Steps
  1. Roast the Beets: Preheat the oven to 400°F (200°C). Wrap the beets in foil and roast for 45-60 minutes until they’re fork-tender. Let them cool, then peel and dice into bite-sized pieces.
  2. Prepare Oranges: Peel the oranges and segment them. Be sure to remove the membrane.
  3. Make the Dressing: In a small bowl, whisk together balsamic vinegar, olive oil, salt, and pepper until emulsified.
  4. Assemble the Salad: In a large bowl, combine arugula or spinach with beets and orange segments. Toss gently.
  5. Add Toppings: Sprinkle crumbled feta cheese and nuts over the salad.
  6. Dress the Salad: Drizzle the dressing over the salad just before serving and toss gently.
