For the Sausage Mixture
  • 1 cup Lentils cooked, can substitute with mashed chickpeas
  • 1 medium Onion chopped, yellow or red
  • 2 cloves Garlic minced
  • 1 tablespoon Nutritional Yeast for a cheesy note
  • 1 cup Breadcrumbs gluten-free if needed
  • 2 tablespoons Soy Sauce use tamari for gluten-free
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

Equipment

  • Skillet
  • Mixing bowl

Method

Steps to Make Vegan Sausage
  1. Mash Lentils: In a bowl, use a fork to mash the cooked lentils until mostly smooth, leaving a few chunks for texture—this will take about 2-3 minutes.
  2. Combine Ingredients: Mix in the chopped onion, minced garlic, nutritional yeast, breadcrumbs, soy sauce, smoked paprika, Italian seasoning, salt, and pepper. Stir until everything is fully combined, about 1-2 minutes.
  3. Shape the Mixture: With clean hands, form the mixture into sausage shapes. Aim for about 4-6 sausages, depending on your preferred size.
  4. Cook in Skillet: Heat a skillet over medium heat and lightly oil it. Cook the sausages for 10-15 minutes, turning regularly until they are browned on all sides.
