Method
 

Basic Instructions
  1. Start by dicing the onion and mincing the garlic.
  2. Set your Instant Pot to sauté mode. Add a drizzle of olive oil, then toss in the onion and garlic, cooking until they're softened and fragrant (about 3 minutes).
  3. Season the chicken with cumin, chili powder, salt, and pepper. Add it to the pot and brown for about 5 minutes.
  4. Stir in the black beans, long-grain white rice, diced tomatoes with their juice, and chicken broth until everything is well mixed.
  5. Close the lid and set the Instant Pot to high pressure for 10 minutes.
  6. After cooking, let the pressure release naturally for 5 minutes, then switch to quick release. Fluff the rice with a fork and serve.
