- Wash the ripe persimmons, halve them and scoop the flesh into a blender. Peel and thinly slice the fresh ginger.
- Combine persimmon flesh, sliced ginger, ground turmeric, and hot water in the blender. Blend until smooth.
- Pour the blended mixture through a fine mesh strainer into a clean pot to remove pulp.
- Gently heat the strained tea over low flame, mix in honey or maple syrup to desired sweetness, and stir until dissolved.
- Let the tea simmer for about 5 minutes to meld flavors.
- Pour tea into cups, optionally garnish with ginger slices or persimmons, and enjoy.
