- In a bowl, whisk together honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper.
- Place the boneless, skinless chicken breasts in a resealable bag and pour the marinade over them. Seal and refrigerate for 30 minutes to 2 hours.
- Rinse jasmine rice under cold water to remove excess starch, then cook in chicken broth for about 15 minutes until fluffy.
- Preheat grill to medium-high heat.
- Place the marinated chicken on the grill and cook for about 6-7 minutes on each side until fully cooked.
- In a bowl, gently combine diced avocados, chopped red onion, fresh cilantro, and olive oil.
- On a plate, layer a bed of fluffy jasmine rice, followed by the grilled chicken, and top with the avocado mix.
- Serve with lime wedges on the side.
