Preparation
- Marinate shrimp in a bowl with egg white, water, and coarse salt for 10 minutes to 4 hours.
- Mix coconut milk, sugar, mayonnaise, vinegar, cornstarch, and salt in another bowl.
- Sauté ginger in neutral oil over medium heat, then pour in the sauce mixture and heat until bubbling.
- In a large bowl, whisk cornstarch and baking powder. Coat each marinated shrimp evenly and place on a baking sheet.
- Heat oil to 350°F in a large skillet. Fry shrimp in batches for 1-2 minutes until golden brown. Drain on a wire rack.
- Reheat the coconut sauce and toss the fried shrimp until coated. Serve immediately.
