Ingredients
  

For the Potato Skins
  • 4 medium Russet Potatoes
  • 2 tablespoons Olive Oil can be swapped with any cooking oil
  • 1 teaspoon Sea Salt adjust to taste
  • 1/2 teaspoon Black Pepper or white pepper for milder taste
  • 1/2 teaspoon Garlic Powder fresh garlic works well too
  • 1/2 teaspoon Onion Powder optional
For the Topping
  • 1 cup Shredded Cheddar Cheese or Monterey Jack or vegan cheese
  • 1/2 cup Crumbled Bacon or turkey bacon/plant-based option
  • 1/2 cup Sour Cream or Greek yogurt/vegan sour cream
  • 2 tablespoons Sliced Green Onions or chives as a substitute

Method
 

Preparation
  1. Preheat your air fryer to 400°F (200°C).
  2. Wash and scrub russet potatoes thoroughly, then dry them with a paper towel.
  3. Prick each potato multiple times with a fork.
  4. Coat the potatoes in olive oil, then season with sea salt, black pepper, garlic powder, and onion powder.
  5. Place the seasoned potatoes in a single layer in the air fryer basket. Cook for 20-25 minutes, turning halfway through.
  6. Allow the potatoes to cool for a few minutes after cooking.
  7. Cut each potato in half lengthwise and scoop out most of the flesh, leaving a 1/4-inch border.
  8. Brush the insides with olive oil and season lightly.
  9. Return the potato skins to the air fryer, cook skin-side down for 5-7 minutes until crispy and golden brown.
  10. Remove and sprinkle with shredded cheddar cheese and crumbled bacon.
  11. Return to the air fryer for an additional 2-3 minutes until cheese melts.
  12. Serve hot with sour cream and sliced green onions.
