Preparation
- Preheat your air fryer to 400°F (200°C).
- Wash and scrub russet potatoes thoroughly, then dry them with a paper towel.
- Prick each potato multiple times with a fork.
- Coat the potatoes in olive oil, then season with sea salt, black pepper, garlic powder, and onion powder.
- Place the seasoned potatoes in a single layer in the air fryer basket. Cook for 20-25 minutes, turning halfway through.
- Allow the potatoes to cool for a few minutes after cooking.
- Cut each potato in half lengthwise and scoop out most of the flesh, leaving a 1/4-inch border.
- Brush the insides with olive oil and season lightly.
- Return the potato skins to the air fryer, cook skin-side down for 5-7 minutes until crispy and golden brown.
- Remove and sprinkle with shredded cheddar cheese and crumbled bacon.
- Return to the air fryer for an additional 2-3 minutes until cheese melts.
- Serve hot with sour cream and sliced green onions.
