Cooking Instructions
  1. Set your Instant Pot to sauté mode. Add a splash of oil and cook the diced onions and bell peppers for about 5 minutes, until they become tender and fragrant.
  2. Add the ground beef to the pot, breaking it apart with a spatula. Cook until it's nicely browned, approximately 6-8 minutes. Drain any excess fat.
  3. Sprinkle the taco seasoning over the browned beef, mixing well to coat evenly.
  4. Pour in the long-grain rice and chicken broth, stirring gently to combine.
  5. Close the Instant Pot lid securely, set it to high pressure, and cook for 5 minutes. Let the pressure naturally release for about 10 minutes.
  6. Open the lid and sprinkle the shredded cheddar cheese evenly over the top. Close the lid for about 2 minutes to allow the cheese to melt.
  7. Garnish with fresh cilantro or slices of avocado.
