How to Make Refreshing Zesty Couscous Salad
  1. Bring water to a boil, add the couscous and a pinch of salt, cover and remove from heat. Let it sit for about 5 minutes.
  2. While the couscous steams, halve the cherry tomatoes and dice the cucumber.
  3. Once the 5 minutes are up, uncover the couscous and fluff it gently with a fork.
  4. In a large bowl, mix the fluffed couscous with the chopped tomatoes, diced cucumber, and torn mint leaves. Drizzle with lemon juice and olive oil before tossing gently.
  5. Sprinkle with salt and pepper, tasting as you go to find the perfect balance.
  6. Serve immediately, or chill in the fridge for a refreshing touch before serving.
