  • 2 cups Mandarin Oranges fresh
  • 4 cups Mixed Greens baby spinach or arugula
  • 1/2 cup Red Onion thinly sliced
For the Sugared Almonds
  • 1 cup Slivered Almonds
  • 2 tablespoons Sugar
For the Dressing
  • 1/4 cup Extra Virgin Olive Oil
  • 2 tablespoons Balsamic Vinegar
  • 1 tablespoon Honey or agave nectar for vegan
  • to taste Salt
  • to taste Pepper

Method
 

Cooking Instructions
  1. Preheat Oven to 350°F (175°C).
  2. Roast slivered almonds on a baking sheet with sugar for about 10 minutes until golden.
  3. In a bowl, add mixed greens as a base.
  4. Layer mandarin oranges and red onion on the greens.
  5. Whisk together olive oil, balsamic vinegar, honey, salt, and pepper for the dressing.
  6. Drizzle dressing over salad and toss gently to coat.
  7. Top with roasted sugared almonds before serving.
