  • 1 cup Cherry Tomatoes Quartered
  • 1/4 cup Red Onion Finely chopped
  • 1/4 cup Pepitas (Pumpkin Seeds) Sunflower seeds work as substitute
For the Creamy Dressing
  • 1/2 cup Mayo or Greek Yogurt Use dairy-free alternatives for dairy-free status
  • 2 tablespoons Fresh Lime Juice Can substitute with lemon juice
  • 1 teaspoon Chili Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1/2 teaspoon Salt

Method
 

Steps to Make the Salad
  1. In a medium bowl, mix together the mayo (or Greek yogurt), fresh lime juice, chili powder, garlic powder, cumin, paprika, and salt until smooth.
  2. In a large bowl, toss together the cooked shredded chicken, black beans, corn, chopped jalapeños, quartered cherry tomatoes, finely chopped red onion, and pepitas.
  3. Drizzle the prepared dressing over the salad mixture and gently stir until everything is thoroughly coated.
  4. Serve the salad immediately on its own, in sandwiches or wraps, or over a bed of lettuce.
