Cooking Steps
- Rinse Fresh spinach thoroughly under cold water to remove any grit.
- In a skillet, pour olive oil and heat over medium for about 1 minute.
- Add the fresh spinach to the skillet and sauté for approximately 2 minutes until wilted.
- Gently crack the eggs directly into the skillet over the sautéed spinach.
- Once the eggs start to set, sprinkle crumbled feta cheese over the top.
- Taste before adding salt and pepper, and sprinkle as per preference.
- Transfer the mixture onto plates while still warm and garnish with fresh herbs.
